Thai Grilled Green Mango

Ingredients

  • 2 jalapeno peppers
  • 1 1/2 T Asian fish sauce
  • 1 1/2 t water
  • 1 T very finely chopped lemongrass
  • 1 T packed brown sugar
  • 3-4 green mangos (unripe)
  • 2 T coarsely chopped cilantro
  • 8 about 8 fresh mint leaves & 10 fresh basil leaves, cut into thin strips

Preparation

Step 1

In small bowl, mix jalapenos, fish sauce, water, lemongrass & brown sugar. Pit each mango. Cut into spears, @ 1" thick. Put spears in med. bowl, pour in marinade & toss to coat. Let marinate for at least 20 min., but not more than 1 hr.
Heat grill to med hi. Grill fruit, letting it brown slightly, til crisp tender, @ 2 min per side. When cooked, transfer to platter, pour any remaining marinade over mangos & sprinkle with cilantro, mint & basil.
