Ingredients
- 1 pound red potatoes, cooked and cubed
- 3 ounces sliced bacon, cooked and crumbled
- 3/4 cup and 2 teaspoons cubed Cheddar cheese
- 3/4 cup and 2 teaspoons shredded sharp Cheddar cheese
- 1/4 large onion, finely chopped
- 3 tablespoons and 1/2 teaspoon mayonnaise*
- 3 tablespoons and 1/2 teaspoon sour cream
- 1/2 teaspoon minced chives
- 1/4 teaspoon salt
- 1/8 teaspoon pepper

In a large bowl, combine potatoes and bacon. In another bowl, combine the remaining ingredients; add to potato mixture ad toss gently to coat. Transfer to a greased 4-1/2-qt. baking dish. Bake, uncovered, at 325 degrees F for 50-60 minutes or until bubbly and lightly browned.
