French Potato Salad

Ingredients

  • 2 lbs new baby potatoes
  • 1/4 cup apple cider vinegar
  • 1/2 c neutral oil such as grape seed or canola
  • 1 tbsp whole grain mustard
  • 1 tbsp dijon mustard
  • 1 tsp sea salt
  • 1 tsp black pepper
  • 6 green onions, chopped

Preparation

Step 1

Slice potatoes into 1/4 inch rounds. Place in cold salted water and bring to simmer on stove for about 15 mins.

Drain potatoes and place in bowl. Mix remainder of ingredients for dressing and toss with WARM potatoes. Cover and let the potatoes absorb some of the dressing. Serve.
