Ingredients
- 4 skinless, boneless chicken breast halves
- 5 t grated lemon rind
- 1 T olive oil
- 1 1/2 t dried oregano
- 3/4 t kosher salt
- 1/2 t pepper
- 1/4 t water
- 2 cloves minced garlic
- Cooking spray
- 4 lemon wedges
- 2 T chopped parsley
Preparation
Step 1
Prepare grill.
Place each chicken breast half between 2 sheets of plastic wrap; pound to 1/4" thickness.
Combine lemon rind & next 6 ingredients & rub evenly over both sides of chicken. Place on grill rack & grill 3 min each side. Remove from heat. Squeeze 1 lemon wedge evenly over each breast half & sprinkle with parsley.
