Ingredients
- 1 c flour
- 1 c uncooked oatmeal
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 tsp cinnamon
- 1 large egg
- 1 c low fat buttermilk
- 1 c chopped banana
- 1/3 c packed light brown sugar
- 2 tsp vegetable oil
- 1 tsp vanilla extract
- cooking spray
- 1 1/2 tsp bottle cinnamon-sugar
Preparation
Step 1
1. Combine oatmeal, flour, baking powder. salt, and baking soda.
2. Combinr egg, buttermilk, sugar, oil, banana, and vanilla.
3. Add banana mixture w/oatmeal mixture
4. Spoon into muffin tins coated with cooking spray. Sprinle with cinnamon sugar.
Bake in muffin tins for 18 minutes @ 425.
