Ingredients
- 1/2 cup long grained white rice
- 1/2 cup water
- 1/2 cup coconut milk
- 1 tbsp sugar
- pinch of salt
- 1/2 cup fresh mango, diced
- 2 tbsp cilantro leaves
- juice of 1/2 lime
Preparation
Step 1
Bring the rice, water, coconut milk, sugar, and salt to a boil in a saucepan over meduim-high heat.
Reduce heat to low and simmer until tender, 15 - 20 min.
Remove from heat, and let stand 5 min. Fluff with a fork.
Stir in mango, cilantro, and lime juice just before serving.
