Eggs Benedict with Crab & Spicy Mustard

Ingredients

  • Mustard:
  • 3 tbsp olive oil
  • 1/2 cup crabmeat
  • 1 tbsp chopped garlic
  • 1 tbsp chopped shallots
  • 1 tsp butter
  • 2 english muffins
  • 4 lg eggs
  • 2 egg yolks
  • 1 tbsp lemon juice
  • 2 tbsp dijon mustard
  • dash hot sauce
  • pinch of Old Bay & pepper
  • 1/2 cup olive oil
  • pinch salt

Preparation

Step 1

In frying pan, heat 1 tbsp olive oil over med heat, add crab, garlic & shallot, mix well, set aside. In another frying pan heat 1 tbsp oil and butter over med heat, put muffins face down, cook 2-3 min until golden brown. Cook eggs, top muffins with egg, crab mixture and spicy mustard.
To make mustard:
place yolks, juice, mustard & hot sauce in bowl, whisk briskly, add Old Bay & pepper, and olive oil while whisking, season with salt....
