Ingredients
- 1 package spaghetti sauce mix
- 1 can tomato paste
- 1 can tomato sauce
- 2 1/2 c water
- 2 eggs (beaten)
- 1 carton Ricotta cheese
- 1 package frozen chopped spinach (thawed, drained very dry)
- 1/2 c Parmesan cheese
- 1/2 package lasagna noodles (uncooked)
- 1/2 lb. mozzarella cheese (grated)
Preparation
Step 1
Combine spaghetti mix, tomato paste, tomato sauce and water in saucepan. Bring mixture to boil and remove from heat. Set aside. Combine eggs, ricotta cheese, spinach and 1/4 c Parmesan stirring well. Set aside. Spread 1 c tomato mixture in a lightly greased 9 x 13 baking dish. Layer half of noodles, spinach mixture, mozzarella cheese, tomato mixture. Repeat the layers. Sprinkle with remaining 1/4 c Parmesan cheese.
Cover securely with aluminum foil. Bake at 350 degrees for 1 hour.
Note:
You may add oregano and parsley to cheese mixture. You may also use ragu or already prepared sauce mixture instead of making your own.
Other Option:
For cheese mixture use 1 8 oz. cream cheese, 1 c cottage cheese,1/4 c sour cream and 2 eggs beaten. Mix this together as cheese mixture over noodles.
