Blackberry Bars

Ingredients

  • 2 cups blackberries or raspberries, fresh or frozen
  • 6 tbsp sugar (if using my grandmother's blackberries!) or 2 tbsp
  • 2 tbsp water
  • 1 tbsp lemon juice
  • 1/2 tsp cinnamon
  • 1 cup all-purp flour
  • 1 cup quick oats
  • 2/3 cup packed brown sugar
  • 1/4 tsp cinn
  • 1/8 tsp baking soda
  • 1/2 cup melted butter or margarine

Preparation

Step 1

For filling:
In med pan, combine berries, sugar, water, juice & cinn, bring to a boil, reduce heat, simmer uncovered 8 min or until thickened, remove. Stir tog flour, oats, br sugar, cinn & bak soda, stir in melted butter, set aside 1 cup of oat mix for topping. Press remaining into ungreased 9x9 pan, bake 350, 20-25 min. Carefully spread filling on top of crust, sprinkle with reserved oat mixture, bake 350, 20-25 min or until topping is set. Cool in pan on wire rack, cut into bars...
