Ingredients
- 1 lb small red potatoes
- 3 strips bacon
- 1 small red onion, chopped
- 1 lb boneless beef sirloin, cut into thin strips
- 1/4 tsp salt
- 5 tbsp honey
- 5 tbsp cider vinegar
- 1/2 tsp cornstarch mixed with 1/2 tsp cold water
- 1 bag baby spinach leaves
- 1 cup grape tomatoes, halved
Preparation
Step 1
Place potatoes in med saucepan, cover with cold water, salt lightly, bring to a boil, simmer 15-20 min or until tender. In lg skillet, cook bacon until crisp, transfer to paper towels, add onion to drippings, cook 3 min. Add steak and salt, cook 2 min, or until steak isn't pink, transfer steak and onions to a plate, keep warm. Add honey and vinegar to skillet, cook over med heat 2 min, add cornstarch-water mixture, cook 30 sec, remove from heat. Drain potatoes, run under cold water, cut into quarters, place in bowl with bacon and steak-onion mix, add spinach, warm honey-vinegar mixture and tomatoes, toss gently...
