Ingredients
- Sauce:
- 2 tbsp honey
- 2 tsp fresh lime juice
- 1/2 tsp grated lime rind
- Quesadillas:
- 1 cup thinly sliced peeled ripe peaches (about 2 large peaches)
- 1 tbsp chopped fresh chives
- 1 tsp brown sugar
- 3 oz brie, thinly sliced
- 4 8-inch flour tortillas
Preparation
Step 1
For the sauce combine first 3 ingredients with a whisk and set aside.
Combine peaches, chives, and sugar, tossing gently to coat.
Heat large nonstick skillet over medium high heat. Arrange 1/4 of cheese and 1/4 of peach mixture over half of each tortilla and fold tortilla over. Place 2 quesadillas in pan and cook 2 min on each side until lightly browned and crisp. Repeat with the 2 remaining quesadillas.
Cut each quesadilla in 3 wedges and serve with sauce.
