Lemon Roasted Potatoes

I don't know if these are quite authentic Greek potatoes but they are very lemony and very yummy! This dish goes well with seafood and souvlaki!

Ingredients
- 1/2 cup lemon juice
- 1/3 cup olive oil
- 2 garlic cloves, minced
- 1 tsp. dried oregano
- 1/2 tsp. sea salt
- 1/4 tsp. ground pepper
- 1 can chicken broth
- 3 lbs. potatoes
Preparation
Step 1
Combine lemon juice, olive oil, garlic, oregano, salt, pepper and chicken broth in a 13"x9" glass pan and whisk to combine. Peel and cut up potatoes. I like to cut them fairly small so that the lemon flavor saturates more of the potato. Toss the potatoes to cover with lemon mixture. Place in 400 degree oven for 1 1/2 hours. Turn every 15-30 minutes to ensure that the potatoes don't get dark or hard on the exposed edges.
