Ingredients
- 2 fresh ripe mangos slices and scooped out
- 1 cup granulated sugar
- 3 T coconut milk
- 1 tsp fresh lemon juice
- 1 cup whipping cream
Preparation
Step 1
Place fruit in blender or processor. Add sugar and blitz for 1 minute or till sugar is dissolved. Add coconut milk and lemon juice and blitz a few seconds. Remove from blender, set aside. Blitz cream until stiff peaks form (not runny). Add mango puree back to blender, blitz 5-10 seconds. Pour into large yogurt-type container and freeze 8 hours or overnight before serving. Take sorbet out of freezer 10 mins before serving. Scoop into martini glasses with bits of mango, and drizzle coconut liqueur over top before serving.
