Shrimp and Grits

Ingredients

  • 2 c. Water
  • 1 c. Fat-Free Half and Half
  • 4 t. Butter (divided)
  • 1/4 t. Salt
  • 1/4 t. Pepper
  • 3/4 c. Quick Cooking Grits
  • 1/4 c. Ketchup
  • 1 T. Honey
  • 2 t. Lemon Juice
  • 1/2-1 t. Hot Pepper Sauce
  • 3 Celery Ribs, Chopped
  • 1 med. Onion, Chopped
  • 1 lb. uncooked med. Shrimp (peeled/deveined
  • 1 c. Shredded Reduced-Fat Cheddar Cheese

Preparation

Step 1

In saucepan bring water, half and half, 2 t. butter, salt and pepper to a boil. slowly stir in grits. Reduce heat to medium-law and cook covered for 5 minutes or until thick, stirring occasionally. Remove from heat.
Meanwhile, in a small bowl mix ketchup, honey, lemon juice and pepper sauce. In a large skillet, heat remaining butter over medium-high heat. Add celery and onion. Cook and stir until tender. Add shrimp (continue stirring) and cook until shrimp turn pink.
Stir cheese into grits and serve with shrimp mixture.
