Ingredients
- 1 onion, diced
- 2 stalks celery, diced
- 8 to 10 potatoes, diced
- water
- salt and pepper to taste
- 3/4 cup butter
- 3/4 cup flour
- 1 quart milk or half and half
- small can clams
Preparation
Step 1
In large pot, saute onion and celery in a small amount of butter.
Add potatoes, water to top of potatoes, and salt and pepper; cook until potatoes are tender.
In another pan, melt the butter and stir in flour. Cook, stirring constantly, for 3 to 4 minutes. Gradually add the milk or half and half. Stir into the potato mixture. Bring just to a boil, stir in clams (add juice too, if you like more clam flavor), and serve.
