Lemony Basil Mushroom Soup

Ingredients

  • SAUTE:
  • 1 1/4 cups chopped onions
  • 1 lb sliced mushrooms
  • 1 cup sliced celery
  • 1 cup sliced carrots
  • 4 cloves garlic, minced
  • 1/4 cup margarine or butter ( or a small amount of olive oil)
  • Add:
  • 1 box/can 32 oz chicken broth
  • 1 box/can 32 oz beef broth
  • 1 can condensed cream of chicken soup
  • or cream of mushroom or cream of mushroom w/roasted garlic
  • 1/2 cup fresh basil leaves, chopped
  • 1/2 tsp pepper
  • 1 tsp lemon juice
  • 1/2 cup uncooked wild rice
  • 1/2 cup uncooked white rice
  • low fat cream of mushroom soup works great

Preparation

Step 1


Bring to boil. Simmer all ingredients for 35 to 40 minutes.
** Dry basil can be used (1 tbsp) but fresh is much better.

Garnish with grated Parmesan is an option
