Harvard Beets

Ingredients

  • 1 can of sliced beets, drained(save juice)
  • 1/4 c. sugar
  • 1 Tbs. cornstarch
  • 1/4 c. beet juice
  • 1/4 c. vinegar

Preparation

Step 1

Blend together cornstarch and sugar.
Mix in juice and vinegar.
Cook in microwave until thickened.(2-4 min.)
Add beets and heat through.
