Ingredients
- 2 Large boneless skinless chicken breasts
- 1 medium lime zested and juiced
- 2 tbs. honey
- 2 tbs. extra virgin olive oil
- 1 Anaheim or other mild fresh pepper
- 1/2 bunch of cilantro
- 1 tbs. of ground cumin
- 1/2 tsp. salt
- 1/4 tsp. ground black pepper
- 1 medium rip avocado peeled, pitted and diced
- 2 tbs. mayo
- 1 tbs. fresh lime juice
- 2-3 drops of tabasco
- 1 fresh jalapeno or Serrano chile steamed and seeded
- 1/4 cup of milk
- 1 red bell pepper seeded and cut into strips
- 20 (6 inch) skewers soaked in water for and hour.
Preparation
Step 1
Cut chicken into 20 1-inch cubes
Combine next 8 ingredients in blender or food processor and pulse until
thoroughly combined. Transfer to bowl, add chicken and toss to coat. Cover and refrigerate for 1 hour.
Making Crema: place avocado, mayo, lime juice, salt, tabasco, chile and milk in a blender or food processor and blend until thoroughly combined refrigerate covered until ready to use
Preheat broiler or grill. thread 1 piece of chicken onto each skewer. Broil or grill skewers until cooked turning once (4-5 minutes per side)
Spoon crema into a bowl and arrange on a large platter. add red pepper to end of skewers. Arrange warm skewers around bowl. sprinkle with chopped cilantro.
