Ingredients
- 1 Head Cauliflower, chopped fine or food processored (I know it's not a word)
- 1/4 Teaspoon baking powder
- 1 Egg, beaten
- 1-2 Tablespoon instant mashed potato flakes (enough to provide adhesion)
- 2 Tablespoons Mexican style corn
- 1 Tablespoon (or to taste) canned (pickled type)jalapeno peppers, minced
- 1 teaspoon salt
- 1/2 teaspoon pepper
Preparation
Step 1
1- Microwave cauliflower 2-4 minutes (soft but not mushy); let cool
2- Mix all ingredients and form into patties
3- Griddle fry with spray oil or deep fry if desired
Great alone or serve with salsa!
