Cauliflower Patty's

Low fat, low carb, low effort GREAT tasty side dish.

Ingredients

  • 1 Head Cauliflower, chopped fine or food processored (I know it's not a word)
  • 1/4 Teaspoon baking powder
  • 1 Egg, beaten
  • 1-2 Tablespoon instant mashed potato flakes (enough to provide adhesion)
  • 2 Tablespoons Mexican style corn
  • 1 Tablespoon (or to taste) canned (pickled type)jalapeno peppers, minced
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

Preparation

Step 1

1- Microwave cauliflower 2-4 minutes (soft but not mushy); let cool
2- Mix all ingredients and form into patties
3- Griddle fry with spray oil or deep fry if desired

Great alone or serve with salsa!
