Mushroom and Brie Soup

Ingredients

  • 1 bunch green onions, chopped
  • 4 T. shallots
  • 1 1/2 cups fresh sliced mushrooms
  • 1 T. butter
  • 6 T. sherry
  • 6 cups chicken broth
  • 2 cups half-n-half
  • 6 oz. brie cheese, rind removed
  • 2 T. cornstarch
  • 2 T. water to mix with cornstarch
  • 1/2 tsp. cayenne pepper
  • 1/3 tsp. nutmeg
  • 1/2 tsp. salt.

Preparation

Step 1

Saute onions, shallots, and mushrooms in butter. Add sherry and chicken broth. Simmer for at least 10 min. Add the cream and brie (rind removed).
simmer until the cheese melts.

Mix cornstarch with water and whisk into soup to thicken. Bring to a boil and remove from heat. Add nutmeg. pepper, and salt.
