Roasted Mushroom Medley

Ingredients

  • 2 lbs. Mixed Fresh Mushrooms
  • 2 Garlic Cloves, minced
  • 1/2 C. Olive Oil
  • Salt & Freshly Ground Black Pepper
  • 1 tsp. Fresh Rosemary, chopped
  • 1 tsp. Fresh Sage, chopped
  • 1/4 C. Fresh Italian Flat-Leaf Parsley, chopped
  • 1 tsp. Balsamic Vinegar

Preparation

Step 1

Preheat oven to 350. Wipe the mushrooms with a clean, damp cloth & trim stems. Slice the mushrooms into pieces no larger than 2" in size. Mix the olive oil with the garlic, herbs & seasonings in an ovenproof casserole dish large enough to fit all of the mushrooms. Add the mushrooms & mix well, coating the mushrooms with the flavored oil. Bake for about 30-40 min or till cooked through. Remove from heat & drizzle with the balsamic vinegar.
