Carrot Cake

Ingredients

  • 2 C. sugar
  • 1 1/2 C. oil
  • 2 tsp baking soda
  • 2 tsp baking powder
  • 2 C. flour
  • 2 tsp vanilla
  • 2 tsp cinnamon
  • 1 tsp nutmeg
  • 4 eggs
  • 3 large apples, cut up (unpeeled)
  • 3 C. shredded raw carrots
  • 1 1/2 C. chopped walnuts

Preparation

Step 1

Preheat oven 325

Beat eggs and oil then add sugar
Put all dry ingredients together and add to first mixture, mixing well. Add nuts, carrots and apples. Stir well and put into a greased and flour pan. Bake 45-60 minutes until center pops up when touched.

Frost with favorite cream cheese frosting when cooled.
