Best Ever Beef Tenderloin

Coconut aminos is a great alternative to soy sauce, which I'm not too fond of. Coconut aminos has a slightly sweet taste to it, so I cut the amount of honey so it wasn't too sweet. It can be found in health food stores, Whole Foods or on Amazon.

Ingredients

  • 4 1/2-5 lbs filet of beef or beef tenderloin
  • Marinade
  • 1/2 cup soy sauce or coconut aminos
  • 1/2 cup honey (I used 1/4 when using the aminos)
  • 2 Tbls chopped ginger
  • 1/4 cup balsamic vinegar
  • 1/3 cup dry red wine
  • 2 Tbls black pepper
  • 2 Tbls chopped garlic
  • 3 Tbls cornstarch or arrowroot
  • 1 bay leaf

Preparation

Step 1

Combine all marinade ingredients in a heavy saucepan; mix well. Bring to a boiling point. Remove from heat, and allow to cool.

Place beef in a glass, enamel or stainless steel pan.

Pour cooled marinade over beef, and cover. Allow to marinate over night in fridge.

Removed from fridge several hours before roasting. Preheat oven to 450 F. Place meat in shallow baking pan, and pour marinade over it. Roast for 20 minutes, basting with marinade from time to time. Reduce heat to 350 F. Continue roasting another 20 minutes (or until beef reaches desired doneness).
Remove from oven ad let cool in marinade. Cut into thin slices and serve.
This is best served rare to med-rare. It is most often done after 40 minutes of roasting, so please be careful not to overcook.
