Artichoke Mushroom Caps

Ingredients

  • 1 pkg (3oz) cream cheese
  • 1/4 cup mayo
  • 1 jar marinated artichoke hearts, drained and finely chopped
  • 1/4 cup parmesan cheese
  • 2 tbsp finely chopped green onion
  • 20-25 mushrooms, stems removed
  • 1/4 cup bread crumbs
  • 2 tsp oil

Preparation

Step 1

In a mixing bowl, beat cream cheese and mayo until smooth. Beat in artichokes, cheese and onion. Lightly spray tops of mushrooms with non-stick cooking spray. Spoon mixture into mushroom caps. Combine bread crumbs and oil; sprinkle over mushrooms. Grill, covered, over indirect medium heat for 8-10 minutes or until mushrooms are tender.
