Ingredients
- 4 ears corn kernels cut from cob
- 1 cup lite coconut milk
- 1/4 tsp salt
- 2 tbsp chopped cilantro
- 1 tbsp lime juice
- 1/4 tsp crushed red pepper
Preparation
Step 1
Combine corn, milk and salt in medium saucepan, bring to boil, the adjust heat to maintain simmer. Cook, stirring occasionally, until most of milk has evaporated, 12-15 min. Stir in cilantro, lime juice and red pepper.
