Corn Dip

Ingredients

  • 2 pkgs (8 oz each) reduced-fat cream cheese (Neufchatel), softened
  • 1/4 cup lime juice
  • 1 Tbsp ground red chilies or chili powder
  • 1 Tbsp ground cumin
  • 1/2 tsp salt
  • Dash pepper
  • 1 can (7 oz) whole kernel corn, drained
  • 1/4 cup chopped walnuts
  • 1 small onion, chopped (1/4 cup)
  • Tortilla chips or assorted vegetables for dipping

Preparation

Step 1

1) In large bowl, beat cream cheese, lime juice, chilies, cumin, salt & pepper with electric mixer on medium speed until smooth.
2) Stir in corn, walnuts and onion.
3) Refrigerate at least 1 hour.
