Ingredients
- 1 t. Olive Oil
- 3/4 t. Oregano
- 1/4 t. Salt
- 1/4 t. Crushed Red Pepper Flakes
- 1 lb. Med. Shrimp
- 3 garlic cloves
- 1/2 c. water
- 3 c. diced roma tomatoes
- 3 oz. Feta cheese
- Linguini
Preparation
Step 1
Preheat oven to 350 degrees.
Heat oil in large skillet. Add olive oil, oregano, salt, red pepper flakes, shrimp, and garlic cloves; saute for 3 minutes. Spoon into 11x17 baking dish coated with cooking spray. Add water to skillet. Cook over low hea till reduced to 1/4c. (about 3 minutes). Stir in tomatoes and pour over the shrimp mixture. sprinkle with cheese. Bake a 350 degrees for 10 minutes. Serve over linguini and sprinkle with parsley.
