Ingredients
- 12 oz boneless lamb shoulder or lamb sirloin, cut in 3/4 inch cubes
- Nonstick cooking spray
- 1/2 C chopped onion
- 1/2 t jarred garlic
- 1 1/3 C beef broth
- 2 medium carrots, cut into 1/2 inch slices (about 1C)
- 1/2 pound small new potatoes, halved or quartered
- 1/4 t salt
- 1/4 t black pepper
- 1/8 t cayenne pepper (to taste)
- 1/2 C frozen peas
- 1/4 C peanut butter
- chopped peanuts as garnish
Preparation
Step 1
Spray large saucepan with nonstick spray. Add lamb cubes, onion and garlic. Brown meat over medium high heat. Stir in broth, carrots, salt, black and cayenne pepper. Bring to boiling, reduce heat. Cover tightly; simmer 20 minutes. Stir in peas and and peanut butter. Cover & cook 1 minute. Stir gently to mix well. Garnish with chopped peanuts, if desired. Serves four.
