Ingredients
- 8 jewel or garnet yams (sweet potatoes)
- 1 pineapple, core removed
- 1/2 c butter
- 1/4 c maple syrup
Preparation
Step 1
Preheat oven to 425. Cut ends off sweet potatoes and poke each in several spots with a fork. Bake the sweet potatoes for 1 hr. Then, allow them to cool. When cool peel the skin off of them. (You could also steam them).
Chop pineapple and place in a food processor. Pulse until finely diced. In a medium-sized saucepan, add the crushed pineapple, butter and maple syrup. Bring to a boil and reduce by half. Pour the topping over the yams and serve.
