Baked Potato Soup

Ingredients

  • 5 large baking potatoes (baked)
  • /4 c. butter
  • 1 medium onion (chopped)
  • 1/3 c. flour
  • 1 quart half and half
  • 3 c. milk
  • 1 tsp. salt
  • 1/8 tsp. ground white pepper
  • 2 c. shredded Cheddar cheese
  • 8 bacon slices (crumbled and cooked)

Preparation

Step 1

Peel potatoes and coarsely mash with fork. In Dutch oven melt butter and add onion and sauté until tender. Add flour stirring until smooth. Stir in potatoes, half and half, and next 3 ingredients. Cook over low heat until thoroughly heated. Top each with cheese and bacon.
