Mom's Crab Cakes

I spent part of my time growing up visiting my dad in the northern Virginia area. I have had my fill of wonderful crab cakes from Baltimore, Maryland to the shores of Delaware, but my mom's have always measured up.

Ingredients

  • 1 lb. jumbo lump crab meat
  • 1 Tbsp. chopped scallion
  • 1 egg
  • 2 oz. mayo
  • dash of Tobasco
  • 1 c. bread crumbs

Preparation

Step 1

Mix together crab meat, scallions, egg, mayo and Tobasco. Add bread crumbs to mixture as needed. The final mixture should be dry, just barely holding together. Form into patties and cook in skillet.
