Skillet Sweet Potatoes

Ingredients

  • 4 medium sweet potatoes
  • 3 T butter
  • 1 8 oz. can crushed pineapple (drained)
  • 1/8 tsp. salt
  • 2 T maple syrup

Preparation

Step 1

Peel sweet potatoes and cut into 1/4 inch slices. In skillet melt butter, add potatoes and cook until golden on bottom. Reduce heat, cover and cook 5 minutes. Turn and cook another 5-10 minutes longer until tender. Gently combine pineapple, salt and syrup with potatoes and heat through.
