Bacon and Egg Salad Sandwiches

Ingredients

  • 6 eggs
  • 6 slices bacon
  • 1/3 cup sliced celery
  • 1/3 cup mayo
  • 1/8 tsp salt
  • 1/8 tsp pepper
  • 4 lettuce leaves
  • 8 slices wheat bread

Preparation

Step 1

Place eggs in medium saucepan, cover with cold water. Bring to a boil. Reduce heat, Simmer about 15 minutes.

Immediately drain, run cold water over eggs to stop cooking.

Peel eggs, chop.

Cook bacon until crisp. Drain on paper towel, crumble. In medium bowl, combine chopped eggs, celery, mayo, salt and pepper.

Mix well. Stir in bacon.

Layer lettuce and egg salad on 4 slices of bread. Top with remaining slices of bread.

Serve.
