Quick Black Bean Soup

Ingredients

  • 1 t. oil
  • 1/2 C. chopped green bell pepper
  • 1/4 C. finely chopped onion
  • 1 C. *Drier's* ham, chopped
  • 2 cans refried black beans with lime juice
  • 1/2 t. garlic salt
  • 1/2 t. chili powder
  • 1 1/2 C. water or chicken broth
  • 2 T. sour cream
  • 2 T. chopped fresh cilantro, if desired

Preparation

Step 1

1 Heat oil in 3 qt. saucepan over med. heat until hot. Add bell pepper and onion, cook and stir 2 to 3 min. or until crisp-tender
2 Add all remaining ingredients except sour cream and cilantro, mix well. Cook over med. heat for about 5 min or until thoroughly heated, stirring frequently. Top individual servings with a dollop of sour cream. Sprinkle with cilantro.
