Sliced Baked Potato

Ingredients

  • 4 medium baking potatoes
  • 1 t. salt
  • 3 T. butter, melted
  • 3 T. chopped fresh herbs such as parsley, chives, thyme, sage
  • 4 T. grated cheddar cheese
  • 1 1/2 T. grated Parmesan cheese

Preparation

Step 1

Preheat oven to 425 degrees.

Peel potatoes. Cut into thin slices, but not all the way through. Put potatoes in a baking dish. Fan them slightly. Sprinkle with salt and drizzle with butter. Sprinkle with herbs. Bake for 50 minutes.

Remove from oven. Sprinkle with cheeses. Bake potatoes for an additional 10-15 minutes until lightly browned, cheeses are melted and potatoes are soft inside. Check with a fork.
