Broccoli salad

Ingredients

  • 1/4 c. sliced raw almonds
  • 1-12 oz. pkg. broccoli slaw
  • 1/2 c. dried cranberries
  • 3 Tbs. olive oil
  • 3 Tbs. rice vinegar
  • 3 Tbs. honey
  • 3 Tbs. Greek yogurt
  • 1 1/2 tsp. Dijon mustard
  • 1/4 tsp. salt and pepper

Preparation

Step 1




In a small nonstick pan, toast the almonds over medium heat, shaking the pan frequently, until just starting to brown. Remove from heat and set aside to cool
Place broccoli slaw and cranberries in a large bowl. Combine the remaining ingredients and whisk together until the dressing is smooth and thoroughly mixed.
Pour the dressing over the slaw. Add the cooled almonds and stir well. Let sit for at least 30 min, stirring occasionally to redistribute the dressing.
