Carrot Cake

Ingredients

  • Cake:
  • 3 cups grated carrots
  • 2 cups flour
  • 2 cups white sugar
  • 2 teaspoon baking soda
  • 1 teaspoon baking powder
  • 2 teaspoon cinnamon
  • 4 eggs
  • 1 1/2 cup vegetable oil
  • 1 teaspoon vanilla
  • Frosting:
  • 2 cups powdered sugar
  • 1 (8 oz.) package cream cheese
  • 1/2 cup melted margarine
  • 1 teaspoon vanilla
  • 1/2 cup chopped walnuts

Preparation

Step 1

Cake:
Mix all cake ingredients expect carrots. Once all mixed well, fold in carrots. Bake at 350 degrees for 25 to 30 minutes or until toothpick comes out clean.

Frosting:
Mix all frosting ingredients except walnuts. Once cake is cooled spread frosting on top then sprinkle walnuts on top of frosting.
