Pan-Grilled Salmon with Pineapple Salsa

Ingredients

  • 1 cup chopped fresh pineapple
  • 2 Tbs finely chopped red onion
  • 2 Tbs chopped cilantro
  • 1 Tbs rice vinegar
  • 1/8 tsp ground red pepper
  • Olive oil spray
  • 4 salmon fillets
  • 1/2 tsp salt

Preparation

Step 1

Combine first 5 ingredients in a bowl and set aside. Heat a nonstick grill pan coated with spray over medium high heat. Sprinkle fish with salt. Cook fish on each side or until it flakes easily when tested with a fork. Top with salsa.
