Cornbread (My Favorite)

Ingredients

  • 3 cups stone ground corneal
  • 2 cups flour
  • 1 T salt
  • 5 T baking powder
  • 1 1/2 tsp. soda

Preparation

Step 1

Mix all above ingredients together (Makes approximately 6 large skillets.)
Store in canister and when ready to cook…prepare as follows:

1 cup mix 1 cup buttermilk (approx.) 1 egg
2 T bacon drippings

Preheat oven to 450. Prepare large iron skillet with oil (2-3 T) with small amount of cornmeal sprinkled in the bottom. Heat on top of the stove a few seconds until cornmeal begins to slightly brown. Pour into skillet and place in over and cook at 450 for only 10-15 minutes until top is lightly browned.
Turn upside down on plate (crusty side up so that it remains crisp).
