Butternut Squash-Caramelized

Ingredients

  • 2 medium butternut squash (4 to 5 lb. total)
  • 6-8 T. unsalted butter, melted and cooled
  • 1/4 C. light brown sugar, packed
  • 1 1/2 tsp. kosher salt
  • 1/2 to 1 tsp. black pepper

Preparation

Step 1

Preheat oven to 400.
Cut off ends of squash and discard.
Peel the squash and cut in half lengthwise.
Using a spoon, remove seeds.
Cut squash into 1 1/4 to 1 1 /2 inch cubes and place on baking sheet.
Toss all ingredients together and spread in a single layer on baking sheet.
Roast for 45-55 minutes, until tender and glaze begins to caramelize.
Turn squash while roating a few times for browning.
