Spinach orzo

Ingredients

  • 5 cups water
  • 2 cups uncooked orzo
  • 8 ounces coarsely chopped fresh spinach
  • 4 ounces of feta cheese
  • 1 small can mandarin oranges
  • bunch of slivered almonds, toasted
  • 1 tablespoon extra-virgin olive oil
  • 1 teaspoon grated lemon rind
  • 1 tablespoon fresh lemon juice
  • 1/2 teaspoon salt

Preparation

Step 1

1.Bring water to a boil in a medium saucepan. Add orzo and cook for 10 minutes.

2.Combine orzo, spinach, feta and almonds in a large bowl.

3.Combine oil, lemon rind, lemon juice and salt in a small bowl and pour over pasta mixture.

4.Toss well to coat. Add mandarin oranges, mix and serve.
