Ingredients
- Dressing:
- 6 large Kale leaves – de-stemmed
- 1 Carrot – peeled and shredded
- 1/2 Red Pepper – diced small
- 3 Green Onions – cut on diagonal
- 1/4 cup Almond Butter
- 1/2 Lemon juiced, about 2 Tbsp
- 1 Tbsp Coconut Nectar or Agave
- 1/2 tsp Sambal oelek, or minced chili
Preparation
Step 1
Mix all dressing ingredients together and set aside.
Tear kale leaves into large pieces. Place these in a food
processor to process, or chop fine. Chop vegetables.
Place all ingredients in a bowl and mix well.
