Ingredients
- 1 (8 oz.) pkg. Inn Maid bowtie pasta
- 1 1/2 lb. boneless/skinless chicken breasts
- 1/2 lb. peppered bacon
- 1 c. sliced onions
- 1 c. sliced mushrooms
- 3 tbsp. olive oil
- 1 tbsp. minced garlic
- 1/2 tsp. pepper
- salt to taste
- 2 tbsp. flour
- 1 (14 1/2 oz.) can chicken stock
- 1 (6 oz.) bag of fresh baby spinach
- 1 (10 oz.) pkg. frozen corn
- 1 (16 oz.) pkg. sour cream
- 1/2 c. sliced green onions
- 1 (5 oz.) pkg. croutons, crashed
Preparation
Step 1
Sauté bacon until completely cooked. Add onions, mushrooms and garlic. Continue to sauté until all are cooked (approx. 5 minutes). Remove mixture and set aside. Take chicken breasts and cut into 1 inch squares. Sprinkle with flour, onion powder, pepper and salt. Sauté chicken breasts in olive oil over high heat until browned. Add can of chicken stock and the mushroom/onion mixture to part. Cover and simmer 10 minutes. Stir in sour cream. Keep stirring until completely blended. Add corn and fresh spinach, stir cover and simmer for 2 minutes. Mix with pasta. On top, sprinkle crushed croutons and green onions. Serve immediately.
