Broccoli Quiche

Ingredients

  • Filling:
  • 1 (15-oz.) pkg. Pillsbury refrigerated pie crusts
  • 4 eggs, slightly beaten
  • 1 c. half-and-half or milk
  • 1/2 tbsp. finely chopped onion
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • dash thyme leaves
  • 2 c. Green Giant frozen broccoli cuts, thawed
  • 3 oz. (3/4 c.) shredded cheddar cheese
  • 3 oz. (3/4 c.) shredded Monterey jack cheese

Preparation

Step 1

Heat oven to 425 degrees F. Prepare pie crust according to package directions for filled one-crust pie using 9-inch pie pan. Bake at 425 degrees F. for 9 to 11 minutes or until light golden brown. Reduce oven temperature to 350 degrees.

In large bowl, combine eggs, half-and-half, onion, salt, pepper and thyme; set aside. Layer broccoli and cheeses in pie crust. Pour egg mixture over broccoli and cheese. Bake at 425 degrees F. for 40 to 50 minutes or until knife inserted near center comes out clean. Cool 5 minutes. Cut into wedges to serve.
