Simple Lime-Cilantro Slaw

Barbecue with slaw is a classic American combo, but Chiarello's modernized version, infused with lime & cilantro, is tangy & bright - just the thing to serve up next to a burger. "I think a menu should have a certain syncopation," he says. "This dish is the intermezzo, a refreshing break from the other richer flavors."

Ingredients

  • 6 c thinly sliced green cabbage (about 1/2 large head)
  • 3/4 c coarsely chopped fresh cilantro
  • 1 t coarse sea salt
  • 1/4 c freshly squeezed lime juice, plus more if needed
  • 2 T freshly squeezed orange juice, plus more if needed
  • 3 T EVOO, plus more if needed

Preparation

Step 1

1. In a large bowl, toss cabbage & cilantro w/salt & pepper.
2. In a small bowl, whisk together lime juice, orange juice & EVOO.
3. Toss together slaw & dressing right before serving. Add more oil or citrus juice to taste, if necessary.
