Baked Salmon with Vegetables

Ingredients

  • 4 - 6 oz. salmon steaks
  • juice of 1/2 lemon
  • 4 oz. cream cheese
  • 1/2 cup tomatoes
  • 1/2 cup mushrooms
  • 1/4 cup fresh chives
  • 2 Tbsp. Italian parsley
  • Salt and pepper to taste

Preparation

Step 1

Place salmon in a shallow, greased baking dish. Drizzle lemon juice over the fish. Combine softened cream cheese with salt and pepper in small bowl. Chop tomatoes, mushrooms, chives and parsley and add to cream cheese mixture. Top salmon with vegetable mixture. Bake, uncovered, in a 400 degre oven until fish flakes easily, about 12 to 15 minutes. Garnish with chives and lemon wedges, if desired.
