potato salad

Ingredients

  • 2 pounds potatoes
  • 1/2 c. veganaise
  • 2 T. cider vinegar
  • 1/4 tsp pepper
  • 1 c. diced celery
  • 1/4 c scallions chopped
  • 1 Tbsp. yellow mustard
  • 2 Tbsp. chopped capers

Preparation

Step 1

boil potatoes for 15 minutes or until pierced with a fork.
cut into bite size pieces. I leave the skin on. add potatoes to celery and scallions.
combine veganaise, cider vinegar, mustard, capers,salt and pepper in seperate bowl.
add veganaise mixture to potato mixture. mix well.
refrigerate to chill.
