Quick Coconut Almond Balls

This recipe is from Food and Wine magazine. It is super easy and quick. No baking involved. They are loaded with antioxidants and protein.

Ingredients

  • 1 c raw almonds (5 oz)
  • 1/8 tsp salt
  • 1/4 vanilla bean, split and seeds scraped
  • 1 c dried pineapple coarsely chopped
  • 1 c soft dates, pitted
  • 2 tbs dried cranberries
  • 1/4 c shredded unsweetened coconut

Preparation

Step 1

In a food processor,pulse almonds, salt and vanilla seeds until very finely ground. Add pineapple and dates and process until the mixture holds together. Transfer to a bowl and stir in cranberries. Roll into 1 inch balls. Roll the balls in coconut until coated. Serve!
