Makeover Lemon Streusel Muffins

Ingredients

  • Streusel:
  • 1/4 C butter, softened
  • 3/4 C sugar
  • 2 egg yolks
  • 1 tsp. grated lemon peel
  • 1 C cake flour
  • 1 C all-purpose flour
  • 1 tsp. baking powder
  • 1 tsp. salt
  • 1/4 tsp. baking soda
  • 1/2 C lemon juice
  • 1/2 C reduced fat lemon yogurt
  • 4 egg whites
  • 2 Tbs. all-purpose flour
  • 2 Tbsp. brown sugar
  • 1/4 tsp. ground nutmeg
  • 1 Tbs. cold butter
  • 1/4 C chopped walnuts

Preparation

Step 1

Beat butter, and sugar until crumbly. Beat in egg yolks, and lemon peel. Combine the flours baking powder, salt, and baking soda; add to the butter mixture alternately with lemon juice and yogurt.

Beat egg whites until stiff. Fold into batter. Fill muffin tins.

Combine struesel ingredients and sprinkle muffins just before baking.

Bake at 375 for 15-20 min.
