Lemon Cake

Lemon Cupcake Christmas Tree Idea: Divide batter among 21 greased paper lined muffin cups. Bake for 20-25 minutes. Tint icing with green food colouring. Ice cupcakes and arrange in shape of tree. Sprinkle with coloured sprinkles and candies...or candles for birthday cake.
Ingredients
- 4 eggs
- 1 1/3 cups milk
- 1 tbsp vanilla
- 4 cups of sifted cake and pastry flour
- 2 cups sugar
- 3 tbsp grated lemon rind
- 5 tsp baking powder
- 1 tsp salt
- 1 cup butter
- Cream Cheese Icing
- 8 oz cream cheese softened
- 1/4 cup butter softened
- 3 cups icing sugar
- 1 tbsp lemon juice
Preparation
Step 1
Grease 13x9 cake pan and line with parchment and set aside. In bowl whisk eggs, 1/3 cup of the milk and vanilla. Set aside. In a large bowl stir together cake flour, sugar, lemon rind, baking powder, and salt. Beat in butter and remaining milk for 2 minutes until fluffy. Beat in eggs mixture. Scrape into pan. Smooth over top. Bake 350 degrees for 40-45 minutes until tester comes clean. Run knife around outside once cool and turn out on rack.
Cream Cheese Icing.
Beat Cream cheese and butter for 1 minute until fluffy. Beat in 1/2 cup of sugar and lemon juice. Beat and add sugar until spreadable but thick. Makes 16 servings. Use pastry bag for piping cake or cupcakes.
